Beef Jerky
My grandfather used London broil for this recipe, which he completely trimmed of fat (something he rarely did in other recipes, unless saving it to render and add back into the recipe in some way), and sliced into strips around 1/4” thick.
3-6 lbs Beef
1 1/2 Tbsp Salt
4 Tbsp Brown Sugar
1 1/2 tsp Garlic Powder
1 1/2 tsp Onion Powder
2 1/2 Tbsp Ground Pepper (about 70 grinds)
1/2 cup Soy Sauce
6 oz Liquid Smoke
2 Tbsp Worcestershire Sauce
Marinate in Ziplock bag, refrigerating 1 to 24 hours. Spread on oven racks, and bake at 170 with door cracked for 5 to 6 hours.
